Today We’re Making Authentic Quesa Birria Tacos | MariYUMs Kitchen
Authentic Mexican Birria Quesa Tacos 🎞
Recipe:
Broth-
– 5-6 lbs chuck roast (authentic birria tacos are made with goat meat, I used chuck bc that’s what I had in my freezer!)
– 1 large onion
– 8 cloves of garlic
– 5 bay leaves
– 1 cinnamon stick
– 1 tbsp pepper corns
– 1 tbsp toasted coriander
– 6 guajillo chiiies
– 3 chilies de Arbol
– 5 ancho chilies
Purée-
– All of your boiled chilies
– Some of your onion, Galric, cinnamon stick, and some of your broth
– 3 bay leaves
– 5 more garlic cloves
– 4 whole cloves (the spice)
– chunk of ginger (peeled)
– 1 tsp pepper corns
– 2 tsp oregano
– 2 tsp cumin
– 2 tsp thyme
– 1/3 cup vinegar
– 2 tbsp paprika
– salt to taste
– Blend 2 tomatoes with some of your beef broth as well
Instructions:
– in a large pot, add your beef (or meat if choice) also add your onion, garlic, cinnamon stick, bay leaves, pepper corns, coriander, and your chilies
– before it comes to a boil, skim the top of your broth of all the scum, we want our broth very clean
– Once it comes to a boil, lower the heat to medium, and continue to let it cook for 1 hour
– after 1 hour, remove your chilies, some of your garlic & onion, your cinnamon stick, as well as some of your beef broth and add them to a blender. Add all of the seasonings I have listed under “purée” and blend together for 1-2 minutes, you want it to be very smooth ~ add back into your broth~
– Boil 2 tomatoes, and purée in your blender with a little of your beef broth as well ~ add back into your broth ~
– Continue to cook for another 2 hours on medium heat, until your meat is nice and tender
– After the 2 hours, remove your beef, add to a separate bowl ( shred it with your hands or a fork) strain your broth as well
– Dip your corn tortillas into your broth, then add to a hot skillet with some butter. You want them slightly crispy, so when you dip your tacos into your consommé, they’ll hold up nicely
– Once both sides are nice and toasted, add your Oaxaca cheese, your shredded beef, as well as some onions and cilantro. Close your tacos, and serve with your consommé

Good Job!!!
Just tried this recipe was awesome, only thing I added differently was a little bit of consome de carne but it came out great
This looks 🔥
Can someone pls tell me the song name?
this is the exact way i see everyone cooking it. “americanized way” havnt seen any of those
American version sucks
I knew the beef broth seemed weird never made it but beef broth is so American to use
Is the consome the juice everything got cooked in?
Appreciate you put recipes into the short’s description! I will give a try surely.
That’s literally every version of birria
Thanks!!!
Close but not authentic
Dude yeah ITS authentic but Dude she left the stemps on
I tried but my tortillas kept braking and also they kept getting stuck to the pan😢😢😢😢help me
Your tacos a dry baby
Looks good can't wait to try it🙂🙂🙂
Woman—you a fuckin real G. This is a beautiful video. Thanks for the work you put in and may you be infinitely Blessed. You sound young too which makes you even more badass that you’re in the kitchen. Your kids and husband are so lucky to be around a woman like you. Truly a queen.
Original doesn't have thyme, ginger, or paprika. So STFU
You can also walk up to your local mexican store and pay $10 for a pound of birria with its consome or broth included 😊
🌮🤤🤤🤤🤤🤤🤤🤤🤤
Looks the same as every other video I’ve watched lol
Consume is usually not that thick
Curious..what’s the “americanized way” you’re referring to?
The jus you dip in for that taco isn’t consommé. Consommé is a clarified broth, that’s a strained broth. Slightly clarified but not in the traditional sense.
Looks amazing!!! Your pronunciation is nice ❤
I’m curious what the “Americanized” version of the recipe is because this looks like a carbon copy of every recipe I’ve ever seen for birria.
I know you messed up when you said 5 ancho chili’s lol wrong just 2 trust it’s strong flavor already
I’m definitely calling the wife the make this I already shared it to her lol
Looks good but the consome is to thick not clarified enough..
Too much
Love this!!!
QUESILLO !!! Not OAXCAN !! Cheese!! SMH !! I guess I not that authentic because that is not QUESILLO !!!!!!!!!!
