Heat 2 tbsp oil in a wok
Add garlic and sauté until fragrant
Toss in prawns, firm tofu, mung bean sprouts, and spring onions
Once the prawns are cooked, crack in an egg, and scramble it
Add the soaked and drained rice noodles
In a small bowl, mix together:
* 2 tbsp fish sauce
* 1 tbsp brown sugar or palm sugar
* Tamarind paste
* Oyster sauce
* Red chilli flakesPour this sauce over the noodles and toss well until the noodles turn soft and evenly coated.
Garnish generously with crushed peanuts (skip if there are allergies)
