If you live for queso dip, y’all are going to flip for this recipe. These shredded beef tacos are made in the Crock-Pot slow cooker and they are so easy and they have so much flavor. So, we’re going to add a chuck roast, some onions and garlic, enchilada sauce, some salt, and our seasonings, which you can find below. Then, we’re just going to add a little bit of red wine vinegar. Give it a stir and then put the lid on. I start this thing first thing in the morning before I go to Pilates. And then at dinner time, I get out my lunch croc. How cute is it? And I add queso blanco, salsa, and a little bit of milk with some salt. I am obsessed with this food warmer because look at this queso dip that literally became absolute magic within 30 minutes. It’s heaven. And about this time, the beef is done and tender. Just look at it. Oh my goodness. Literally falls apart and is so flavorful. INGREDIENTS
For the Shredded Beef
3.5lb beef chuck roast
1 large white onion, roughly chopped
4 garlic cloves, whole
3 cups green enchilada sauce
2 tsp kosher salt
1 tbsp cumin
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp oregano
2 tbsp red wine vinegar
For the Queso Dip
16 oz queso bálano veleta
1/4 cup mild salsa
1/4 cup milk
Pinch of salt
For serving the tacos
Corn tortillas
Pink pickled onions (on the blog)
Cilantro
Hot sauce
INSTRUCTIONS
Add all the ingredients for the shredded beef to the @crockpot 7 quart slow cooker and stir.
Place the lid on the @crockpot and set it on high for 9-10 hours or until the beef is ‘fall apart’ tender.
30 Minutes before serving the beef, grab your small lunch crock and add the ingredients for the quest dip and put the lid on.
Stir once at 15 minutes, then put the lid back on and stir again before serving until it’s smooth and creamy.
Once everything is ready, carefully shred the beef and build the tacos with beef, quest dip, pickled red onions, cilantro and hot sauce.
