VIRAL CARROT WRAPS 🥕

I’ve made a vacation of these with zucchini, pickles, jalapeños, and I had to put a spin on them with carrots. These are probably my second favorite after the zucchini, they come out really good, super pliable/ and they are a touch sweeter which went really well with the toppings I used here.

A medium carrot has about 4 net carbs, so this is a great lower carb option if you’re watching carbs.

Recipe makes 3-4 wraps

Here is how I made it:

1.Preheat oven to 375F.

2.Shred 3 medium carrots into a bowl. Crack in an egg, add 1 cup of shredded pepper jack cheese, toss in 1/2 tbsp smoked paprika, 1/2 tbsp garlic powder, 1/2 tsp chipotle pepper (optional), and a small pinch of salt. Mix really well.

3.Grab a cookie sheet, line with parchment paper (important!) and scoop the carrot mixture into circular shapes. You’ll get 3-4 good sized wraps here.

4.Pop it into the oven at 375F for 16-18 minutes. Then remove and let cool for a few minutes while you prep your fillings

5.I spread a base of my homemade guac here. Just mash 2 avocados with the juice of 1 lime, a large handful of freshly chopped cilantro, 1/2 small white onion, a couple pinches of salt, and about a tablespoon of toasted sesame seeds for crunch (optional).

6.I also added some leftover shredded beef (chicken or shrimp work just fine), topped with a tsp of sour cream, some sriracha, and more fresh cilantro. Again, use what you like here!

7.Plate them up and devour.

  2. I mean or people just that created like how would you know I'm saying how would you know to make something like that and it's going to turn out right or he did he get it from somewhere what was that his own idea

  3. These look great. Caution, though, parchment (all non-stick) adds silicates to your food. I wonder if untreated brown butcher would also work. (Haven’t tried it, yet. Just threw away my aluminum baking sheets. Alzheimer’s…). I think I’d just grease the baking sheets…

  4. Isn't now the time when everyone wonders what to do with their abundance of home grown zucchini? This might workb for them too, if you press out some of the moisture.
