Quesabirria tacos using @wildforkfoods beef shanks! Gave them all that good smoke, covered them with all the Birria goodies and shredded them up for taco perfection!

What you’ll need to make’em:
For the birria:
-4-5 lbs of beef shanks.
-1-2 tbsp all purpose Mexican seasoning.
-1 onion chopped.
-2-3 guajillo and ancho chiles, seeds and stems removed.
-2 tomatoes chopped.
-2 bulbs of garlic sliced in half.
-4 cups beef stock.
-1 tsp cinnamon.
-1 tsp oregano.
-1 tbsp salt.
For the tacos:
-Corn tortillas.
-Oxaca cheese shredded.
-Oil.
How to make’em:
Season the beef shanks with all purpose seasoning.
Set up your smoker to 275-300f.
Smoked the shanks until they hit 170f.
Add the shanks to a pot or deep pan with the tomatoes, onions, garlic, oregano, salt, cinnamon and beef stock.
Cover and place back on the smoker until they hit 205f and are probe tender.
Remove from the smoker, pulled the meat out and shredded it up.
Strain the braising liquid to make your consume.
To make the tacos:
Heat your cast iron pan or griddle and add a little oil.
Dip the tortillas in the consume, getting the fat from the consume on the tortillas.
Place the tortillas on the pan and add the birria and cheese.
Once the cheese starts to melt, fold the tacos up and continue to fry both sides.
Serve tacos with onions, cilantro and a cup of the consume.
Enjoy as many as you can!
