Bruschetta
Ingredients:
⢠Rustic, crusty bread (like Italian country bread or ciabatta)
⢠3â4 ripe but firm tomatoes
⢠A handful of fresh sweet basil leaves
⢠2â3 cloves garlic
⢠Extra virgin olive oil
⢠Salt and freshly ground black pepper
Instructions:
⢠Slice the bread about 1/2 to 1 inch thick. Toast the slices until golden and crisp.
⢠While the bread is still warm, gently rub one side of each slice with a peeled garlic clove.
⢠Chop tomatoes into small, even piecew. Remove the seeds and the watery core to avoid soggy topping.
⢠Tear or chiffonade the fresh basil leaves into thin strips.
⢠In a bowl, combine the chopped tomatoes, basil, a drizzle of olive oil, salt, and pepper. Toss gently to mix.
⢠Spoon the tomato and basil mixture generously onto each toasted bread slice.
⢠Drizzle a little extra virgin olive oil on top if desired. Serve immediately to keep the bread crisp.
