Deconstructed Avocado Toast with Bacon

It was time to use this avocado because it was perfectly ripe; I went out and picked some husky cherry tomatoes and cilantro, added some finely chopped onions, pressed garlic, salt, pepper, extra virgin olive oil, lemon juice, and a little Greek vinaigrette… I fried some bacon, picked a couple purple cabbage leaves, and made some wheat toast, here is my Deconstructed Avocado Toast with crispy Bacon and garnished with the cabbage leaves and cilantro, whew!
