This is how most Vietnamese Sandwich or Bánh Mỳ are sold in Hanoi, Vietnam; you will find Pate, fried eggs, and pork belly with 40-50% or more fat. I used to eat this almost everyday before school started in Vietnam lol.

Pork belly recipe:
Minced garlic, shallot, 1tsp black pepper, 1tsp sugar + salt and 4 tsp Fish sauce. Marinate it at least 1 hour. Cook in pressure cooker for 20 minutes to get to the right tenderness. I have a gas pressure cooker, so if you have electric one, it may vary few mins less.
Coconut milk will bring more sweetness from the pork belly flavor. Smoked paprika for slightly orange color and somewhat smoky flavor.
Any baguette will do, if you are closer to Vietnamese supermarket, they often sell smaller baguette, which is a closer version to Bánh Mỳ in Vietnam.
