Spice up your life with this flavor-packed Mexican burrito bowl! 🌯✨ Perfectly seasoned rice, beans, veggies,salsa, guac, sour cream and all your faves in one bowl.
Who’s ready to dig in? 😋

For Mexican Seasoning :-
RED CHILLI POWDER 1 TBSP
CUMIN POWDER 2 TSP
CORIANDER POWDER 1 TSP
OREGANO 2 TSP
SALT 1 TSP
GARLIC POWDER 2 TSP
ONION POWDER 2 TSP
– Add everything to a blender & blend into fine powder.
– ⁠Store it in an airtight container.

For the Veggies :-
Oil- 1tsp
Onion- 1no.
Bell Pepper- 1/2cup
Sweet Corn- 1/8cup
Salt to taste
Paneer- 150gm
Mexican Seasoning- 2tsp
Lemon Juice- 1/2no.
– Saute onion, bell pepper & corn together with some salt.
– ⁠Add in paneer, mexican seasoning & lemon juice.
– ⁠Mix everything nicely.

For the Mexican Bean :-
Oil- 1tsp
Garlic- 3no.
Green Chilli- 1no.
Onion- 1no.
Tomato- 1no.
Salt to taste
Boiled Rajma- 1cup
Mexican Seasoning- 2tsp
Ketchup- 1tbsp
Lemon Juice- 1/2no.
– Saute garlic, green chilli & onion in some oil.
– ⁠Add in tomato & salt, let it cook.
– ⁠Once the tomato become mushy, mash it from the back of the spatula.
– ⁠Add in rajma, mexican seasoning, ketchup & lemon juice.
– ⁠Mix everything nicely.

For the Tomato Salsa :-
Tomato- 1no.
Onion- 1no.
Garlic- 2no.
Green Chilli- 1no.
Salt to taste
Pepper- a pinch
Lemon Juice- 1/2no.
Coriander Leaves- handful
– Chop everything & add it to the bowl.
– ⁠Mix it all nicely.

For the Sour Cream :-
Hung Curd- 1/2cup
Garlic- 1no.
Lemon Juice- 1/2no.
Mexican Seasoning- 1.5tsp
– Take 1cup dahi & add to a muslin cloth. Leave it for 2 hours.
– ⁠Take hung curd in a bowl, grate a garlic, squeeze lemon juice, add mexican seasoning.
– ⁠Mix everything nicely.

For the Lemon Coriander Rice :-
Butter- 2tsp
Boiled Rice- 1cup
Salt to taste
Coriander Leave- 1/4cup
Lemon Juice- 1/2no.
– Melt butter in a pan, add in boiled rice, coriander leaves, salt & lemon juice.
– ⁠Toss everything nicely.

For the Guacamole :-
Avocado- 1/2no.
Salt & Pepper- a pinch
Lemon Juice- 1/2no.
– Cut & Scoop ripe avocado, mash it nicely.
– ⁠Add in seasoning & mix it well.
.
Final Assembly :-
– Add in chopped lettuce.
– ⁠Add all the above prepared components.
– ⁠Garnish with lemon wedge & coriander leaves.
– ⁠Enjoy it warm😀
