There is nothing more satisfying than digging into a cake that is healthy, glutenfree,egg-free and so delicious. An unusual combination of orange, carrot, toasted nuts, raisins makes it perfect for children and adults. The cashew cream sauce does not have any cream and is over the top delicious. Great to bake with kids for breakfast or for dessert!!

Glutenfree Eggless Breakfast Carrot cake
Serves 5-6 person
Preparation time 15 minutes
Baking time 1 hr

Ingredients
Dry
1 cup powdered oats flour
1 cup almond flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon baking soda
Flavours ( choose all or as per choice)
1 teaspoon cinnamon
1 teaspoon vanilla extract
Wet
2 carrots medium-sized grated (about 11/2 cups)
1 brown banana mashed
2 tablespoons raisins
2 tablespoons walnuts toasted
½ cup yoghurt
3 tablespoon coconut oil
¼ cup brown sugar
Sauce
½ cup cashew soaked overnight
½ cup orange juice
2 tablespoons honey
Garnish
Orange Zest
Tip into a 9×11 sheet style bakeware. Top it with orange slices.
Bake for 30 -35minutes. Check for doneness.
Serve top cashew cream sauce
Cashew Cream Sauce
In a high speed blender blend the soaked cashew in the orange juice and honey.
Add some orange zest in the prepared sauce.
