🛒 Ingredients
½ tablespoon butter
½ cup cooked rice
3 eggs
¼ cup black beans
1 oz cheddar cheese (sliced)
¼ avocado
2 tablespoons salsa
3–4 pickled jalapeños
📝 Directions
Heat the butter in a nonstick skillet over medium heat. Add the cooked rice and press it into an even layer. Let it cook undisturbed for 2 minutes while you prep the eggs.
Whisk the eggs and pour them directly over the rice. Immediately scatter the black beans and cheddar evenly over the eggs on half. Cover the pan and cook until the eggs are set and the cheese is melted, about 5 minutes.
Spread the avocado, salsa and jalapeños over the half of the omelet with the beans and cheese then fold and enjoy!
