Ingredients (serves 2):
200g lean beef mince
1.5 tbsp taco seasoning
30g tomato salsa
80ml water
20g ranch dressing
15g chipotle paste
30g fat free Greek yoghurt
Packet of Mexican microwave rice
Shredded lettuce
6 cherry tomatoes quartered
40g sweetcorn
1/4 red onion diced
A couple of sprigs fresh coriander chopped
20g Red Leicester Cheese grated (or reduced fat cheddar)
💗 Add the garlic and beef mince to a frying pan. Cook until almost browned.
💗 Meanwhile, mix together the ranch dressing, chipotle paste and Greek yoghurt set to one side.
💗 Add the taco seasoning, salsa and water to the beef mince and return to heat a few minutes until thickened.
💗 Warm the rice according to pack instructions.
💗Add the rice to the bowl with the beef, lettuce, tomatoes, sweetcorn, onion, cheese drizzling the sauce all over.
Notes – we also had some homemade tortilla chips. I make these slicing 2 mini wraps seasoning with smoked paprika and garlic granules air frying for 6 minutes at 185 degrees (extra 91 cals each)
These are also banging for lunch I usually reduce the amount of rice I have 💗
