RECIPE (serves 2 hotties)
2 tbsp olive oil
2 large shallots, finely chopped
4 cloves garlic, finely chopped
1 tbsp chopped fresh oregano
4 tbsp tomato paste
1/2 cup San Marzano tomatoes, broken into pieces with a spatula
1/2 cup rosè wine (drink the rest with din!)
1/4-1/2 cup heavy cream (or coconut milk dairy-free)
8 oz linguine
1 tbsp butter (can use oil if dairy-free)
1/2 lb jumbo scallops (or about 5 per person), patted dry
Fresh basil, to top
Salt & pepper
