if you were obsessed with Chipotle in college like me but want to make your own at home here’s how to make it yourself with the best rice the best chicken all the cheese you’re gonna be obsessed the key to that incredible chicken from Chipotle is the marinade so we’re gonna do some chicken thighs some Chipotles and adobo cumin oregano garlic powder salt pepper you get the idea put it all in a zip top bag and then let it marinate for at least two hours when you’re ready to go you’re gonna cook up some rice I like to toast it first then add your liquid cook your chicken on both sides you want that golden sear when your rice is done we’re going to add lime juice and cilantro and then build the ball we’ve got the chicken we’ve got pinto beans we’ve got corn homemade pico de gallo some guacamole obsessive amounts of cheese it is perfection in a bowl

    1 tsp cumin
    4 minced garlic cloves
    1 tsp dried oregano
    2 tsp kosher salt
    1 tsp black pepper
    1 tbsp chili powder
    2 tbsp olive oil
    17oz can chipotle (only use 4 peppers and all sauce)
    3/4 cup water
    Blend and marinade overnight

    Blending it really helps get the flavor more in the chicken. This recipe has the exact same taste as chipotle chicken. I double the ingredients for 12 pieces of chicken thighs

  3. For the Chicken:
    boneless skinless chicken thighs
    olive oil
    chipotle peppers in adebo
    ground cumin
    dreied oregano
    garlic powder
    kosher salt
    black pepper
    zip up the bag
    mix into the marinate
    leave in fridge for at least 2 hours
    after done sear the chicken for 5-6 min on each side

    For the rice:
    olive oil on medium heat
    add white rice toat for 60 sec
    add water bring rice to a boil
    cover and reduce heat.
    after done add lime and cilantro.

    Then asemble
    add pinto beans, corn, pico, guacamole, cheese & cilantro
    Then Enjoy 😋

  4. Chipotle is so mediocre. We have a local joint run by a family that does it so much better. Never been impressed with chain Tex-Mex when local can and will always be better. That said, neither is inexpensive to eat multiple times a week so finding recipes that you enjoy and recreate a similar flavor are important. Hardest part for me is cutting rice. Love good red rice. It's not good for my type 2 or weight loss goals though.
