It is called chopstick-rolled eggs and is quite common at yatai stalls in the Kansai region, but this time I would like to make a simple reproduction using a frying pan of an egg omelet. The ingredients are easy to find and very simple to make. I hope you’ll have a great time. Please have a look at it. Easy recipes at home First, here are the ingredients for chopstick-rolled eggs. Here are the ingredients. I will use flour, water, egg, dashi stock, small leeks, cabbage, small shrimps, red ginger, tenkasu, and salad oil when baking. First, the dough itself is made with flour, water, eggs, and dashi stock. I will use bonito dashi for the soup stock. Please use your favorite dashi here. Then I add small shrimp, red ginger, and then small leeks, etc. to the dough. Can add this one to your liking. Here are the ingredients for the toppings. Here are the ingredients. Eggs, mayonnaise, okonomiyaki sauce, aonori (green laver), bonito flakes, and toppings with these ingredients. Can also use your favorite toppings here. I will quickly make it with these ingredients. Easy recipes at home The first step is to make the fried egg as a topping. Put salad oil in a frying pan. And let’s stretch it. Put it on fire. Heat is medium. Once this is done, the pan is heated. After 30 seconds of warming, turn off the heat. And let’s crack an egg in here. Crack this beaten egg down a little bit lower. Be careful not to burn yourself. I want to bake three pans according to the size of the pan. Place over heat. Low heat. Continue to cook slowly over low heat. This will allow the water to drain out of the eggs, resulting in a very rich fried egg. If they’re sticking together a little bit, shape them before they’re fully cooked. Like this. It looks like this. Now let’s continue to cook it slowly over low heat. OK. It baked up nicely like this. Removing from the baked items. Baked like this, looking delicious. Can cook as much fried egg as you like. The fried egg is now ready. Next, shred the cabbage. I have 1/4 ball here now, but I’m going to use roughly 80g this time, so I’d like to shred that amount. Can do this shredding in any way you are comfortable with. Now let’s cut. OK. Shred only what you will use like this. Please make this shredding as thin as possible. If it is difficult, you can slice it with a slicer. Or you can buy them already sliced into strips at convenience stores or supermarkets, so I think you can do it more easily. The cabbage is now ready. Next, I cut the leeks. First I cut off the root. Then cut in half and align the cut ends. Then cut it into round slices. The small leeks are now ok. This one goes in the dough, but you can use it as a topping as well. Next is red ginger. Chop this one appropriately. Red ginger is ok for this. Now let’s make the dough. In a bowl, add flour and water. Stir these two together well first. Mix thoroughly to avoid lumps. After mixing well, crack the eggs into the mixture. Then mix well. The dough becomes quite crumbly. Dashi stock is added here. And mix well. Mix well after each addition of ingredients. This will help the dough blend better. OK. Next, I add a small shrimp here. And then small leeks. And add red ginger. Mix this well. Now the dough is ready. I want to bake the cabbage and tenkasu before putting them on top of the dough. Easy recipes at home Now let’s bake it. First, salad oil in a frying pan. Then the oil is stretched. It is not yet on fire. Pour in the dough in this uncooked state. The dough is quite loose. Spread over the entire area. Spread like this. Once spread out, place the cabbage still uncovered. And sprinkle some more tenkasu on top. OK. Put it all on the fire after putting it all on like this. The heat is about medium to medium low. Now bake until the dough is browned. Press the cabbage lightly. Now I will grill it. Now it is browning. When the dough is just enough to move when you shake it up and down like this, flip it over. Have ho. It goes something like this. Looks delicious. Then I’ll hold it down a little bit. Bake on one side until browned as well. OK. When one side is also browned, turn off heat. Now the dough for the egg rolls is ready. Now, put it out on a bat or something and bake the rest in the same way. I’m going to start with the second batch, but the pan is hot now, so put it on a wet wipe or something and let it cool down a bit before baking the next batch. All done baking. It is baked like this deliciously. This quantity makes roughly 5 slices. This will vary depending on the thickness and other factors, so I would suggest using 4-5 sheets as a rough guide. So now going to roll this one up with chopsticks and top it off. Now I will finish it up. First, please prepare a splitter. This splitter is also a splitter with two pieces attached to it. Use this one. Spread the tip out a little bit like this. Place the dough between the spread out pieces. Have ho. Tuck it in like this until you get about halfway through. Now like this. Now like this. Now I can wrap it around. Wrap it around like this. Now I will put it on a plate and top it up. First is the sauce on top of this. Next is the mayonnaise, please take the cap off and put a piece of plastic wrap on top of it. Once it is snug, fasten it with a rubber band.
