ズッキーニのパスタ – 夏の簡単レシピを3通りの方法で
Let’s start with a basic recipe for pasta with zucchini. It’s very simple and light, and suitable for everyone.
Then we’ll make it more complicated — but don’t worry, we’ll only make the recipe more complicated, not its execution — and we’ll use ingredients that we almost always have at home.
You can then choose whether to stop at the first level or continue.
Ingredients for 4 servings:
Basic recipe:
4-6 small zucchini
Salt, pepper, extra virgin olive oil, parsley
1 small-medium onion
1 clove of garlic
350 g / 12.34 oz pasta
In addition:
100 g/ 3.52 oz bacon
Parmesan cheese to taste
2 egg yolks
350 g / 12.34 oz pasta
How to make it:
Heat two turns of oil in a large frying pan, then add the sliced onion.
Brown it, then add the crushed garlic clove and the zucchini, which should be cut into rounds.
Cook over a high heat for 5–6 minutes, stirring frequently.
Season with salt and pepper, then pour in a glass of water, cover with a lid and cook for a further 5 minutes.
Set aside a few spoonfuls of the sautéed zucchini to garnish the dish later.
Blend the rest with a little parsley. If you have any, add a handful of fresh spinach leaves to improve the color.
Cook the pasta al dente, drain it and toss it with the zucchini cream.
Add the set-aside zucchini on top and your delicious, light zucchini pasta is ready.
But that’s not all. We want to make life more complicated (and make everyone happy).
At this point, add two egg yolks, two handfuls of Parmesan cheese and a ladleful of cooking water to the pasta.
Return everything to the pan and cook over a medium heat for a minute — just long enough to cook the egg — stirring continuously.
Be careful not to turn it into an omelette! Use a little cooking water and keep the temperature moderate.
And here is the pasta with a cream sauce made from zucchini!
Are you happy with that? No way! Not a chance! Meanwhile, you will have browned some bacon, either cut into strips or cubes. Place it on top of the creamed pasta.
Sprinkle it with pepper and drizzle with olive oil.
