  1. Herbed Garlic Butter Octopus and Avocado Ciabatta Toast
    Ingredients:
    For the herbed garlic butter:
    * 1 garlic bulb
    * Salt, to taste
    * Pepper, to taste
    * 1/4 teaspoon chilli flakes(optional)
    * 1 tablespoon olive oil
    * 2 tablespoons butter
    * 2 tablespoons finely chopped coriander
    For the toasted bread:
    * 8 slices ciabatta (or your preferred bread)
    * Salt, to taste
    * Pepper, to taste
    * 2 tablespoons olive oil
    To assemble:
    * 1/2 avocado, thinly sliced
    * 100g octopus carpaccio
    * Juice of 1/2 lime
    * 1 bird's eye chilli, finely chopped
    Method:
    * Preheat the oven to 200°C (fan).
    * Prepare the herbed garlic butter by cutting off the top of the garlic bulb. Place it in a mini cocotte, add salt, pepper, chilli flakes (if using), and olive oil. Cover with a lid and bake for 40 minutes until the garlic is soft and fragrant. If you don't have a mini cocotte, you can also wrap the garlic bulb tightly in aluminium foil before baking.
    * Once the garlic is ready, squeeze the roasted garlic cloves into a bowl. Add butter, finely chopped coriander, and additional salt and pepper. Mix well until a smooth paste forms. Place the herbed garlic butter in the fridge to chill.
    * Place the bread slices on a baking tray lined with parchment paper. Sprinkle with salt, pepper, and drizzle with olive oil. Bake for 9-11 minutes or until the bread is golden and toasted.
    * To assemble the Herbed Garlic Butter Octopus and Avocado Toast, spread a generous amount of the herbed garlic butter on each slice of toasted bread.
    * On one half of the bread, arrange three slices of avocado. On the other half, layer the octopus carpaccio.
    * Drizzle lime juice over the avocado slices and sprinkle with finely chopped bird's eye chilli for a hint of spiciness.
    * Serve and enjoy the flavourful Herbed Garlic Butter Octopus and Avocado Toast!
