Fettuccini Alfredo with fresh shrimp & veggies – Oh So GOOD!

This is one of my all time faborites, A delicious meal that us rich in flavor. Comfort food & crowd pleaser, with no artificial colors flavors or preservatives…

Fettuccini Alfredo
Homemade Alfredo Sauce:
1/4 cup butter
2 cups heavy cream or milk of your choice
1 1/2 cup shredded Parmesan cheese
1/2 cup shredded Romano cheese
1 lb fresh or frozen uncooked shrimp
Fresh veggies of choice (I’m using zucchini, squash, Cherry tomatoes & mushroom)
4 cloves garlic minced
2 green opinions chopped
Salt & pepper to taste
1-2 tsp oregano
1-2 tsp Basil
1-2 tsp Parsley
(Fresh is best)

On Med heat, add butter, onion and garlic. Sautée 2-3 minutes or until soft. Add in heavy cream and 1/2 of fresh herb mixture.
Once mixture is heated through, mix in shredded Cheese, and stir until 4-5 minutes or until cheese is thoroughly melted. (May need to add more cream or milk if too thick)
Add in the rest of the fresh herbs, add salt & pepper to taste.
In seperate pan, sautée veggies for 2 minutes.
Serve immediately over your choice of fettuccine noodles, spaghetti squash.
Top with fresh grated parm.
Pairs well with a Chardonnay or Savignon Blanc
