Pumpkin Christmas Lasagna 🍂🎅

    A rich & cozy twist on the most sacred of Italian dishes 🇮🇹—with roasted squash, sausage ragù, gorgonzola, and creamy béchamel layered to perfection. One bite and it’s holiday magic. 💫 @cookwithfez

    Ingredients:
    12 lasagna sheets
    5 Italian pork sausages
    3 leeks
    ⅓ cup white wine (80ml)
    2 cups chicken broth (500ml)
    1 Delica squash (or mantovana squash)
    3½ tablespoons butter (50g)
    ⅓ cup all-purpose flour (50g)
    2 cups whole milk (500ml)
    1¼ cups crumbled blue cheese or gorgonzola (150g)
    ¾ cup grated Parmesan cheese (70g)
    Extra virgin olive oil, to taste
    Nutmeg, to taste
    Fresh thyme, sage, and rosemary, to taste
    Black pepper, to taste
    Salt, to taste

    Preparation:
    Cut the Delica squash into quarters and remove the seeds. Season with salt, black pepper, a generous drizzle of extra virgin olive oil, and plenty of fresh herbs (thyme, sage, rosemary). Wrap in aluminum foil and roast at 360°F (180°C) for 1 hour.
    Slice open the sausages and remove the casings. Cook the sausage meat in a hot pan for 10–12 minutes, until nicely browned. Finely slice the leeks and add them to the pan. Deglaze with the white wine and add fresh thyme. Cook for another 10–12 minutes until flavorful and slightly reduced.
    In a saucepan, melt the butter, then whisk in the flour. Cook for 3–4 minutes until golden. Add all the cold milk at once and stir continuously. Let it simmer for 7–8 minutes until thickened. Season with salt, black pepper, and nutmeg.
    Once the squash is cooked, scoop out ¾ cup (200g) and stir it into the béchamel sauce. It will add flavor and give the sauce a beautiful orange hue.
    In a baking dish, layer the ingredients in the following order:
    Pumpkin béchamel
    Sausage and leek ragù
    Lasagna sheets

    Repeat the layers (béchamel, ragù, pasta) for a total of 5–6 layers
    Sprinkle chunks of blue cheese or gorgonzola and a generous amount of Parmesan on each layer.
    Finish with only béchamel and the cheeses on top to create a crispy, golden crust when baked.
    Bake until bubbly and golden on top. Serve hot

    1. Can you substitute the sausage with maybe chicken fillets or any other than sausages?

      Also, isn't it dangerous to use aluminium foil for your food? Thanks for responses.
