    Carnitas Recipe

    Ingredients:
    • 4 lbs pork shoulder (or pork butt), cut into 2-inch chunks
    • 2 tbsp olive oil
    • 1 tbsp salt
    • 1/2 tbsp black pepper
    • 2 tsp cumin
    • 2 tsp oregano
    • 2 tsp garlic powder
    • 2 tsp onion powder
    • 2 lbs pork lard, divided
    • 1 bottle Mexican Coke
    • 1 medium onion, roughly chopped
    • 5 garlic cloves
    • 2 bay leaves
    • 1 orange (juice and peel)

    Classic Red Borscht

    Ingredients:
    • 3 chicken leg quarters
    • 4 small beets
    • 200 g (about 2 cups) cabbage
    • 3 potatoes
    • 1 onion
    • 1 carrot
    • 1 tablespoon vinegar
    • 1 tablespoon sugar
    • Bay leaf, fresh herbs, salt, and pepper — to taste
    • Water

    • Add enough water to fully cover the chicken legs by about 1–2 inches.
    • In a separate small pot, cook the beets in water until tender.
    • Do not discard the beet water—add it back into the soup for extra color and flavor.

    Belgian Liège Waffles
    • 3 cups flour
    • 3/4 teaspoons salt
    • 1/4 cup sugar
    • 7 g instant dry yeast
    • 1/2 cup warm milk
    • 2 teaspoons vanilla extract
    • 3 eggs
    • 3/4 cup butter (room temperature)

    Mix-in
    • 3/4 cup Belgian pearl sugar

    Cream Cheese Icing
    • Cream cheese (room temperature) – 2 packs (8 oz each)
    • Butter (room temperature) – 8 tbsp
    • Powdered sugar – 1.5 cups

    Cake
    • All-purpose flour – 2 cups
    • Baking soda – 2 tsp
    • Salt – 1/2 tsp
    • Ground cinnamon – 1.5 tsp
    • Vegetable oil – 1 1/4 cups
    • Granulated sugar – 1 cup
    • Light brown sugar (packed) – 1 cup
    • Vanilla extract – 1 tsp
    • Eggs – 4 large
    • Grated peeled carrots – 3 cups (about 5–6 medium carrots)
    • Coarsely chopped pecans – 1 cup
    • Raisins – 1/2 cup

      Maybe make popsicles or ice cubes for the kid’s concoction? If it would freeze, and not lose its power. I need your concoction! I need an inflammatory reducing miracle.
      I’ve never had beets, although I think they’re beautiful! 😂❤
