I could never get into the canned liquid cheese poured over a pile of chips, served as "nachos".
When I was a kid in Central Texas, back when dinos ruled the Earth, if we ordered nachos at a restaurant, it was a single layer of chips, usually 12 per order, with shredded cheese and a pickled jalapeno in the center and each chip was separate like an hors d'oeuvre. One restaurant served them with a little scoop of refrito beans in the center and that was considered especial.
Now I make mine like your full plate of chips and shredded cheese but I like to add a sprinkling of seasoned ground beef, green onion and fresh diced jalapeno throughout, and after cooking I spoon a little salsa over the top. I love a full plate of these for my dinner.
FYI for anyone looking for good nacho cheese sauce – Costco (at least in my area) has Que Bueno cheese sauce in a #10 can. It’s WAY better than most other brands like Rico’s.
I feel lucky finding this host and his postings. I just wanted to let you know……….. I’m moving into your house. I would cook like you are doing for my son and his coworkers. They worked very close at a college theater; they would all pile into my house and chow down, sometimes I would get a very famous person come in with them and join in on lunch and quiet time. There were a few times I would make “TO GO” lunches for the famous person or persons for later before their performance. My husband was pretty shocked at the whole situation because he was a police officer and the thought of famous people eating at his table, food from his wife’s hands gave him some wonderful stories the next time he went back to work. I even had a famous person ask me to make a whole Apple Pie for them. I told him I’ll have to deliver it still warm.
Why does movie theatre nacho cheese taste so much better than any kind of cheese like in that can? Ive tried that brand the same day I went to the movies and it was no where near the theatre.
Nachos are the Hors d'oeuvres of TexMex cuisine. I like mine loaded with black olives, fresh & pickled jalapenos, pico, shredded lettuce, guac, refried beans, and ground beef.
Man those Nachos looked good! I get Nachos at every Mexican food restaurant I go to, at least the first time. And if they're really good, I get them every time I go back. The last Nachos you made is typically closest to what I like. When I make them at home, I fry the Tortillas cut in 1/2 rather than 1/4 and put beans on each of chips laid out individually rather than the chips poured out on top of each other, followed by cheese and beef fajita and jalapeno. Then I do Onion, lettuce, pico (or tomato depending on what I have at the time), sour cream and guacamole. You really can't beat a plate of good nachos!
00:10 ¡MIL GRACIAS for giving Sr. Anaya proper credit for inventing the nacho and showing how it is rightly made! As a boy sixty years ago, I was privileged to eat the original nachos especiales at the Club Moderno in Piedras Negras, the successor to the Club Victoria where Nacho Anaya first worked in the early years of WWII, and also at the Hotel Crosby in Villa Acuña, the SECOND place in the world the original nachos were ever served (also during World War II). I learned to appreciate the purity of totopos crowned with Cheddar cheese, and jalapeños en escabeche (not even refritos in those days; panchos came several years later).
Now I am SO OFTEN disgusted by people who heap four or five toppings randomly onto a poor little pile of helpless totopos. Those aren't nachos, those are a gringo chain restaurant mess from north of the border IMO. For the rest of my life, I've gone around preaching against the heresy of chain-restaurant "nachos" and the way they foul the true nacho's legacy.
