One-Pot Tom Yum Goong (Thai Spicy & Sour Shrimp Soup)
Ingredients (serves 2–3)
10–12 medium shrimp, peeled and deveined
4 cups light chicken broth
2 stalks lemongrass, bruised and cut into 2-inch pieces
4–5 kaffir lime leaves, torn slightly
3 slices ginger
5–6 small Thai chilies, smashed (adjust to taste)
200 g (1, 7 oz can) straw mushrooms
2 medium tomatoes, quartered
1 small onion, sliced
2 tbsp fish sauce
1–2 tbsp lime juice
Fresh cilantro, chopped for garnish
1 tsp chili paste (Nam Prik Pao) for deeper flavor

Instructions
Prepare the broth:
In a medium pot, bring water or chicken broth to a boil. Add lemongrass, kaffir lime leaves, ginger, and chilies. Simmer 5–7 minutes to infuse flavors.
Add mushrooms, tomatoes, and onion. Simmer 3–5 minutes until vegetables are slightly tender.
Add shrimp to the broth and cook 2–3 minutes, until pink and just cooked through.
Stir in fish sauce, and lime juice. Taste and adjust:
• More lime for sourness
• More fish sauce for saltiness
• A small spoon of chili paste for smoky heat
Ladle soup into bowls, removing lemongrass and ginger slices if desired. Garnish generously with fresh cilantro.
