Taco night just got exciting because today I’m going to show you how to make taco pie. All the flavors of tacos but in a fun little dish. [Music] Hi, I’m Carrie with eating on a dime.com. We’re on a mission to help families eat well on a budget. We love sharing our favorite budget friendly recipes and today’s taco pie is so easy and so fun. And I love that you can actually double it and throw it in the freezer for a future meal. And stay tuned to the end because we’ll talk about how to do that. But if you want to find the full recipe so you can pin it, print it, and save it. We have that link in the description below. First, we’re going to preheat the oven to 425°. Next, you need refrigerated pie crust. These have two in them. This is a Pilsbury brand, but any brand will work. Um they’re just the refrigerated kind and they but the reason that I tell you you could easily make double and freeze the other one is because two come in here. So let’s go like you could easily make a second one and put it in the freezer so that way you can enjoy it later and it’s not going to take a lot of work. So we’re going to take one of these and press it into a pie plate just like if you’re going to make an apple pie or a pumpkin pie or any kind of pie. And this is fun because you’ll see a lot of taco pies will use like tortillas, but the flavor with this taco pie, it’s so fun with the crust. You’re going to love it. So, I’m just going to unroll it. And then we’re going to press it into the pie plate. Getting it slowly spread out to the edges to get it nice and flattened. So, what I’m doing is just gently pressing it into the corners without it tearing. If you have like huge excesses on the edges, you can cut them off, but we’re doing pretty good today. Then we’re going to take a fork and we’re going to poke holes in it to prevent bubbles. And you’re going to poke it about 15 to 20 times. Now, all we got to do is bake it. We’re going to throw this in the oven at that 425° for 10 to 12 minutes until it’s nice and golden brown. While it is baking, let’s go ahead and start getting our filling ready. First thing we need is a yellow onion or a white onion will work as well. And we just need half of it chopped. I’m going the lazy way today and using my chopper. You guys know I love this. I don’t think I mentioned it, but if you’re new here, make sure you like and subscribe. Um, I don’t want you to miss any more of our familyfriendly recipes. We’re really growing this community and we are loving it. Um, and I hope you guys are loving our videos. But this is the chopper. I just cut the onions into quarters, push the point side down, and you get these beautiful chopped pieces. Now, you can find the link for everything that we’re using today. Like, so if you want to try out the food chopper or if there’s anything that you love, we include all the links in the description as well for you. In a large skillet, heat it up to mediumigh heat. And then add in those diced onions and one lb of ground beef. Since there is fat in the ground beef, I didn’t add any oil, but if you use a really lean ground beef, then go ahead and add just about a tablespoon of oil to the pan. And then I’m going to use this meat separator. We have it linked as well, just to help separate it. Now, the trick with this is you just start it out and then let it sit. As you let it sit and it browns, then you can use this more. If you do it all right now, then it kind of sticks to it. But just let it simmer and let it do its thing to get nice and brown. As it sits and it starts to brown, then you can start poking it with this. And that’s how you get that beautiful crumble. We’re going to cook this until the onions are soft and the beef is no longer pink. Add in two teaspoons of minced garlic or you can do two cloves of garlic minced, one packet of taco seasoning and a half a cup of salsa. Now, we’re going to mix this together. By the way, if you haven’t been following me, you know I’m obsessed with the spoon. So, I’ll include a link for it because it’s like a spatula, it’s a spoon, it’s everything in one. So, we’re going to get that seasoning mixed well throughout the ground beef. Then stir in a half a cup of sour cream. Even if you don’t like sour cream, I say go ahead and throw this in because it gives it this amazing creamy flavor. And one cup of shredded KBY Jack cheese. Any cheese will work. And remember, we always believe that you should hand shred your cheese. So, buy the block of cheese and then hand shred it. It just makes it to where it will melt so much better. And then we’re going to mix all of this until it is well combined. You’ll end up with this beautiful cheesy mixture. The pie pie crust is done. And so we’re going to remove that and set it on the counter. Now we’re going to add that delicious cheesy beef mixture right to your pie crust. Now some of my pie crust kind of sunken down. So what I should have done is pressed it a little bit more into the edges. So, I just wanted to make sure y’all knew that little tip when you’re doing your pie crust. Just make sure it’s really pressed up into it. That way, it doesn’t shrink. I mean, it’s still going to be delicious. Don’t get me wrong. But if you want it to be perfectly pretty, you guys know me. I’m not about perfectly pretty. I’m about perfectly tasty and it’s going to be delicious. So, we’re just going to spread this out. Oh, that was hot. Silly Carrie. Use a paw holder that’s right in front of you. Now, you’re going to use this spatula and just spread it out. I have a thin or not thin layer, an even layer throughout that pie. Add the remaining cheese on top. Again, it is just shredded KBY Jack cheese, but you could do any kind of cheese you’d like. Sharp cheddar would be delicious. You could do two different kinds of cheeses. A Mexican blend would be delicious as well. And in case you’re wondering, yes, that hurt really, really bad. So, my fingers are on fire. Use these. Okay, now we’re going to place this back into the oven. I have lowered the temperature from 425 down to 350°. And then all we have to do is pop this in there for about 10 minutes just to get it nice and bubbly. So, the great thing is is that if you can make this ahead of time and just keep it in your fridge and then just throw it in the oven at 350° and you’ll probably need closer to 20 minutes just so it gets completely heated through. But since it’s already warm, it won’t take that long. Let’s go. Now, you just got to prepare your toppings. Um, we recommend lettuce, tomatoes, some more sour cream, maybe some black olives. You could even do some onions. Just whatever you like on your tacos is great. So, we’re going to do uh we got a Roma tomato. And I’m just going to get this chopped up. Now, when I cut a tomato, I cut the end off first and cut it in half lengthwise. And then I cut it in half lengthwise again. So, it kind of looks like a slice or something. Then I’m going to run my knife through them into like sticks, almost like French fries, and then you can chop them into your pieces. Also, in case you didn’t know, you can actually throw your tomatoes into the little mini food chopper that we use for the onions, but I just didn’t think about using that till right now. I don’t feel like we’re going to need a lot of um tomatoes, so I’m just going to chop up one today. Now we’re going to chop up some lettuce. The best way to do that is you just take the bottom, you know, stem. Just give it a quick bang on your counter. And then I kind of just cut loosely around it if it doesn’t break. Sometimes it breaks. And then you just pull that core out. Everybody say hi to my puppies. They’re getting excited. Probably because they can smell the taco pie. I get excited when I can smell it, too. Then we’re going to take a sharp knife and I’m just going to run it in like really thin strips. Probably just need about half of a head of lettuce today. But once you’ve run it into thin strips, then you just turn it and you run your knife. So that way you can have shredded lettuce. Super easy and simple to do. The taco pie is ready. It is nice and melted. Woo. And it’s beautiful. Let’s talk. Okay. Now, for serving it, traditionally, I like to serve it with the lettuce and tomatoes on top and serve it with a little sour cream. But if you have picky eaters, serve it just like this where you have your toppings on the side just like you would if you are making a taco bar. Um, that way people can just grab whatever they want. Plus, if you’re going to eat some of it now and then maybe save some for later, like leftovers, if you store if you have the uh lettuce I can’t talk today, apparently. If you have the lettuce on top of the pie, they will get soggy and gross. But if you keep them separate, then they’ll stay nice and crisp. So, it just kind of depends. If your whole family likes everything, throw it all on top of there. But for me today, I’m going to wait until after we cut it and then add my toppings that I want. Okay, guys. Now, I highly recommend you let it set for a good 5 to 10 minutes. That’s just kind of the rule of thumb with any casserole dish because when it’s piping hot, it’s just going to fall apart when you cut into it. So, we’re going to get it to Got to be careful with this. Again, remember I learned my lesson from earlier, but it’s cooled down, so we’re okay. I’m just cutting it into triangle just like you would if you were, you know, eating a pie. Okay. And then I’m using a pie scooper duper. Is that what they’re called? I think that’s the professional term. Isn’t she lovely? Woo! It’s so yummy. Beautiful piece. I think I might have cut myself too small of a piece because I’m hungry. I’m going to have to go back for seconds. Top it with whatever you want. I’m going to do lettuce and tomatoes, salsa, black olives, um, sour cream, just jalapenos, everything you like on a taco. And it’s ready to eat. Now it’s time for my favorite part, eating it, friends. Oh, I’m so excited about this. Taco night will never be the same because now you can jazz it up with a taco pie. It’s so good. I may have gotten too big of a bite, so I had to finish chewing. It’s really, really good. This is one that you’re going to make on repeat because it’s so easy to throw together. It reheats well, and it’s one that the kids are going to love, and it’s great when you’re having company because it’s just something completely different than just regular taco night. After all the years, you would think pillsbury would make a real flaky crust instead of the cardboard pie crust.
Love my shopper, use it often. I don’t have to push anything down like you did, set it chop it.

I had filed this away after seeing it in my email. Looks delicious! I’ll definitely be making it. At what point would I take this recipe to for a second one and freeze it? I’d also appreciate your suggestion for wrapping for the freezer? Tin foil? Something else? At times I’ve wasted that other crust by not figuring out what to make with it.
