だし解凍アレンジ!オクラ&パプリカの冷凍&解凍方法を紹介!

In this freezing channel, I will introduce recommended frozen foods and easy, convenient and delicious frozen recipes that you can make at home. Today I will do this! I will introduce a recipe for freezing and thawing okra and peppers using dashi stock. In my previous video, I introduced thawing using dashi stock. The method involves defrosting frozen ingredients while adding seasonings such as noodle soup or liquid broth. This method is suitable for cold dishes because it allows you to season the food without using heat, thaws the food, and the food ends up cold. This time I will introduce a recipe using okra and paprika. I freeze the okra first. Okra has a fine hair, but you can remove it by rubbing it against another okra. If you are concerned about the fine hairs on your okra, rub it over a board and carefully remove them. I don’t mind if a little bit of hair remains on the okra. Some okra has a soft skin. Okra with soft skin can be frozen as is without any problems. However, some okra has a hard skin, so I generally recommend boiling it and then freezing it. Add salt to boiling water and boil the okra. When boiling okra, boil it for about 3 minutes. Boil the okra until it turns bright green. By boiling okra in salt, we can lock in the umami flavor. Another advantage of boiling okra is that it helps it last longer when frozen. I throw away the water. And I pour water over the okra. I like to chill the okra immediately. If you have ice water, use it to cool the okra. Wipe off the water from the okra with kitchen paper. You can carefully wipe off the water from each okra, but it’s also fine to just wipe it off easily. Once you have placed the okra in the bag, press out the air and seal it. I freeze these okra to make frozen okra. I’ll show you how to freeze peppers next. I cut the peppers in half. Remove the seeds from the peppers. I removed the seeds from the peppers and washed them. Cut into lengthwise slices about 1 cm wide. Cut into 1cm wide strips, then cut in half lengthwise. It is recommended to cut them into small 1cm pieces and freeze them for easy use. I deflated the bag and sealed it. I freeze this in this state. I’m going to freeze these now. I froze okra and peppers. I recommend stocking these in your freezer as they can be used for a variety of purposes. It’s convenient to have frozen okra in stock, and you can use it in stir-fries as is, or cut it up and add it to miso soup. It’s convenient to freeze okra so that it’s ready to use. This time I’m going to make a Chinese-style okra salad. Pouring liquid broth directly onto food will speed up the thawing process. I recommend this method of thawing because the flavor of the broth will soak in while it’s thawing. I add two teaspoons of soy sauce here. I add a teaspoon of sesame oil here. I’ll add one chopped chili pepper here. I make this spicy. Once you’ve added all the seasonings, knead the pack to mix in the liquid. After this, close the bag, expel the air inside, and seal it. If you leave the okra in this state for 30 minutes, it will taste delicious. If leaving it for more than 30 minutes, place it in the refrigerator. This has been defrosted. This is cool to the touch and you can enjoy a cool dip. I like to top the dish with chopped okra for a nice look. You can also pour the melted soup over okra to give it a cooler appearance. Finally, sprinkle with roasted sesame seeds to taste. This completes the Chinese-style pickled okra dish using frozen okra. This is frozen peppers. Freezing peppers is also very convenient. Paprika is colorful, so you can use it when you want to add color to your dishes. Paprika can also be used in stir-fries. When stir-frying, the peppers will release water, but if you stir-fry them for a long time to evaporate the water, the sweetness of the peppers will be enhanced and they will be delicious. This time I will defrost it in dashi stock. This time I’m making marinade with paprika. I use this to make a cold marinade. I’ll add 100ml of sushi vinegar here. I first add 100ml of sushi vinegar to the frozen peppers. I add the same amount of water as sushi vinegar, which is 100 milliliters. If you like a lighter taste, you don’t need to add olive oil. However, adding olive oil gives it a more authentic flavor, so I recommend adding it. This is the end of the seasoning and there’s no problem. But this time I’m going to add a little fragrant rosemary to really add some flavor. This is up to your preference, you can add it or not. Or, if you have a favorite herb, feel free to use that. Stir this together to allow the flavors to blend. Squeeze out the air from the bag and seal it. Marinate this for 10 to 20 minutes and enjoy! I recommend it in the summer, even if it’s half-thawed or frozen cold. This is delicious even when eaten frozen. I was able to unpack this. As you can tell by touching it, it’s very cold, so you can enjoy a cold marinade. It’s fine to put this on a plate as is. This completes the cold marinade using frozen peppers. The dish is ready. If you stock up on frozen ingredients, you can easily add flavor by simply adding dashi, so it wasn’t a difficult experience for me. I eat okra. Let’s eat. The great thing about using dashi to defrost food is that it keeps the ingredients cold. The okra salad is delicious when served cold. This has a delicious aroma of chicken bones and sesame oil.
