Toss in three smashed lemongrass stalks, five caffer lime leaves, and a thumb- sized piece of gangal. Let that boil for 5 minutes. Next, add in 200 g of mushrooms and 200 g of shrimp. Cook until the shrimp turns pink and the mushrooms are tender. Now, add 2 tablespoons of fish sauce and the juice of two limes. For the heat, drop in two to three Thai chilies, chopped. Finally, stir in a tablespoon of Thai chili paste and give it a good mix. Let it simmer for another 2 minutes and you’re done. Serve hot.
