日本のポテサラとはじゃがいもの種類も違うイギリスバージョン。このスタイルのサラダは学食からカフェまでよくあるタイプ。とてもシンプルだけど、じゃがいもの美味しさを味わうには一番！
ちょうど季節がら、チャイブの花も咲いていたので、これも良いアクセント！

4人分: Serves 4

・シャーロットポテト: 600g——600g Charlotte potatoes
・塩(シーソルト): 小さじ1/4——1/4 tsp sea salt
・レモン: 1/2個——1/2 lemon
・エキストラバージンオリーブオイル : 大さじ1——1 tbsp extra virgin olive oil
・サワークリーム: 80g——80g soured cream
・チャイブ: 10g——10g chives
・チャイブの花: 少々——chives flowers

1.Wash the potatoes and drain them in the colander.
2.Prepare the pot, colander and the lid. Cover the lid with a tea towel.
3.Boil water in a pot over a medium heat. Set the colander with potatoes and the lid on. Steam them for about 20~30 mins or until they are cooked. Make sure if they are cooked by sticking a skewer.
4.Halve the potatoes and place in a bowl. Season with salt, lemon juice and olive oil. Leave them to cool.
5.Dress with the soured cream and 2/3 of the chopped chives.
6.Serve the salad and sprinkle the rest of the chopped chives and chives flowers.

1.じゃがいもの皮はよく洗ってざるに揚げておく
2.蒸し器、もしくは鍋に合うざると蓋を用意し、蓋に布巾を被せてコンロにつかないように余分を縛っておく
3.鍋にお湯を沸かし、中火にかけておく。じゃがいもの入ったざるをのせ、布巾を被せた蓋をして、中火で20〜30分、じゃがいもが柔らかくなるまで蒸す。蒸せたかどうかは竹串を刺して確認してください。スッと竹串が通れば蒸されています
4.じゃがいもが熱いうちに半分に切り、ボウルに入れる。塩、レモン汁、オリーブオイルで和えて冷ます
5.粗熱が取れたらサワークリームとチャイブの2/3程度の量をキッチンバサミで切りながら加え和える
6.皿に盛り、残りのチャイブと、あればチャイブの花を飾って出来上がり
