Tomato Bruschetta, but make it gourmet 🍅

Roasted cherry tomatoes, herbed butter, cream cheese & fresh basil layered on toasted rustic baguette – this one’s a bite of pure joy!

This isn’t your average bruschetta. It’s a delicious twist that balances creaminess, crunch, and roasted richness in every bite.

The slow-roasted cherry tomatoes turn sweet and jammy in the oven, the garlic and basil infuse them with bold flavour, and the cream cheese brings that cool, tangy contrast that pairs beautifully with the buttery, toasted baguette.

Ingredients:
🍅 1 cup cherry tomatoes, halved
🍅 4 garlic cloves, chopped
🍅 A handful of fresh basil leaves & 2 tbsp EVOO
🍅 Salt & pepper
🍅 2 tbsp softened butter
🍅 1/2 tsp mixed herbs & chilli flakes
🍅 Rustic baguette slices or sourdough bread
🍅 Cream cheese as required
🍅 Fresh basil leaves for garnish

Method:
🍅 Add cherry tomatoes, chopped garlic, basil, olive oil, salt & pepper to a baking tray.
🍅 Roast cherry tomatoes at 180°C for 20 minutes or until soft and slightly caramelised.
🍅 Mix softened butter with mixed herbs and chilli flakes.
🍅 Spread the herbed butter on both sides of the baguette slices. Toast until golden and crispy.
🍅 Spread a generous layer of cream cheese on each toast. Top with the roasted tomato mixture. Finish with fresh basil leaves.
