Toddler-Friendly Breakfast Burrito Meal Prep | Easy Spinach, Egg & Cheese Wraps

Hubby made 12 breakfast burritos for me and our toddler. Breakfast is all set for the week and I didn’t lift a finger. Is this what true love is? ..or parenting survival 101? (Possibly both?!)
Ingredients:
🌯12 Sanora-style flour tortillas (the ones from Trader Joe’s are the perfect size for our toddler)
🌯12 eggs
🌯1 Costco-size bag of spinach, cooked down and squeeze out liquids – or you can just use frozen spinach! (1 bag sounds like a lot but trust.. it REALLY cooks down)
🌯 1/3 cup milk (or dairy-free milk)
🌯 Salt and Pepper to taste
🌯 1tbsp butter
🌯 8oz block of cheddar cheese, shredded
Instructions:
1. In a large mixing bowl, mix together 12 eggs, spinach (must be cooked and squeezed dry!), 1/3 cup milk, salt and pepper.
2. In a large pan (non-stick is best if you don’t want to be spending another 30 min cleaning after) on medium-high heat, throw in a tbsp of butter.
3. When butter is melted, pour in egg mixture.
4. Stir the egg mixture once every 5-10 seconds to scramble. Take off heat a bit before it’s cooked through.
5. Optional: Warm up your tortillas a little bit on low heat on directly on your stove to make it more pliable.
6. Build your burrito: Tortilla, eggs, cheese, and fold it up.
7. In a smaller pan, heat the pan and lightly grease. Place burrito seam side down to help seal the burrito. We also like to flatten the burritos a bit to make it more flatter/easier for toddler to take a bite.
8. Let cool slightly before servicing to ravenous toddler OR let cool completely, then place in a ziplock bag and freeze for up to 3 months (ours usually doesn’t last that long…). To reheat, microwave to defrost quickly for ~40 sec then place in air fryer/convection oven at 300F for 10-12 min to crisp up tortilla.
