Nacho Cheese Sauce & Chili Cheese Fries!! (Vegan & soooooo good!)

Hello friends! I’ve been in the mood lately for comfort food and today’s video is just that! You can make the fries from scratch but it’s a work night and I’m keeping things simple.

Vegan Chili-Cheese Fries with Nacho Cheese Sauce
Cook your frozen or fresh fries in the oven or air fryer until nice and crispy.
Spoon the chili over top and smother with the hot cheese sauce. YUM!
Instant Pot Chili
Ingredients
· Oil, if using
· 1 Onion, diced
· 1 Green Pepper, diced
· 2 Garlic cloves, crushed (or 1 teaspoon garlic powder)
· 1 can Diced Tomatoes (540 ml or larger)
· 1 can Black Beans, (400 ml to 540 ml)
· 1 can Kidney Beans, (400 ml to 540 ml)
· 1 can White Navy Beans, (400 ml to 540 ml)
· 1 cup frozen or fresh Corn
· 1 cup Broth, or Water (adjust to desired thickness)
· 2 teaspoons Chili Powder
· 1 teaspoons Cumin
· 1 to 2 tablespoons Smoked or Hot Paprika
· 1 tablespoon mixed herb mix. I used Mrs. Dash Garlic & Herb Seasoning
· 1 tablespoon maple syrup.
Directions:
1. Drain and rinse your cans of beans.
2. Using the Sauté feature, sauté the diced onion and green pepper for a few minutes until the onions begin to soften.
3. Add the rest of the ingredients and stir well to mix.
4. Set Instant Pot to sealing. Press Manual cook and cook on high pressure for 5 minutes. Note: It will take a few minutes to come up to pressure and seal.
5. Once its done cooking, use quick release by CAREFULLY turning the knob to venting. I like to do this on the stovetop with my hood fan on.
Nacho Cheese Sauce (vegan & dairy free)
Ingredients:
· 1/2 cup raw Cashews, soaked for at least 4 hours or overnight. (If you forget to do this you can boil them in water for 10 minutes on the stove)
· 1/4 cup olive oil
· 1 cup plain non-dairy milk such as unsweetened Almond Milk
· 3 tablespoons Tapioca Starch (this is what will thicken it and give it the stretchy consistency)
· 2 tablespoons Lemon Juice
· 1 tablespoon Tomato Paste
· 1 tablespoon Miso Paste
· 1 teaspoon Smoked Paprika
· 1 teaspoon Chili Powder (leave this out if you want to make a regular cheese sauce instead of nacho)
· 1 teaspoon Onion Powder
· 1 teaspoon Garlic Powder
· 1/4 teaspoon Turmeric Powder
· Salt & Pepper to taste (leave this for the end)
Directions:
1. Drain and rinse your cashews.
2. Add everything to a high speed blender and blend until very, very smooth.
3. Add to a pot and heat over low heat until the cheese mixture thickens.
This is great over everything! Broccoli, fries, baked potato, for a super easy mac & cheese, etc.
it will last about a week.

how long does miso keep after you’ve opened it?
I made a queso dip with rotel tomatoes in it, it started with cashews and it was so so good. We aren't even vegetarian, just trying to eat better. Love this recipe and I am sure my husband will too. Thanks for sharing!

Have you ever used nutritional yeast for cheese sauces? It has an amazing cheese taste. For homemade vegan parmesan cheese we use raw cashews, garlic powder and nutritional yeast. Want to try your recipe.

The cheese sauce was delicious on tater tots. I substituted a teaspoon of soy sauce for the miso paste because I didn’t have any. Should I get red or white miso?
