Juicy, Cheesy, and Flavor-Bomb Birria Tacos. We have a tradition of making or eating tacos for Taco Tuesday. This recipe is a definite BANGER! If you follow this recipe to the T, you won’t want to make tacos any other way! These QuesaBirria Tacos are going to be a family favorite, they’re savory, savory, and savory! UMAMI bomb for sure. There’s a slight twist to this recipe, a cool, refreshing, and spicy cilantro yogurt creme sauce! This is BentLeey’s Birria Tacos! 🌮🔥

🌮THE RECIPE🌮
For the Meat & Broth:
4 pounds – Beef Short Ribs
1 cup – Carrots
1 cup – Celery
1 cup – Onions
1 tablespoon – Cumin
4 pieces – Bay Leaves
4-5 pieces – Chile Anchos
1/4 cup (1 small can) – Tomato Paste
1/4 cup – All Purpose Flour
4 cups – Beef Stock
16 ounces (1 bottle, or more to enjoy w/ tacos) – Stout Beer

Spicy White Cilantro-Yogurt Sauce:
1 cup – Plain Yogurt
1 cup – Cilantro
4 tablespoons – Mayonnaise
1 tablespoon – Lemon juice
1 tablespoon- lemon zest
1-2 pieces (however spicy you want it): Serrano Peppers
1 clove – Garlic
Salt to taste

The Assembly Ingredients:
-Corn Tortilla
-Shredded Beef Short Ribs
-Fontina Cheese
-The Consome *Broth*
-White Sauce
-Radish
-Cilantro
-Onion
-Lime
