Avocado Egg Salad

An easy, clean eating lunch idea made with avocado, eggs, and just a handful of ingredients you probably have on hand!

2 avocados

juice of 1/2 lemon

salt and pepper

1/2 tsp mustard

1 clove garlic, grated

1/4 cup chopped red onion

1 tsp green goddess seasoning

4 hard boiled eggs, chopped

Add all ingredients except eggs to a large bowl. Mash with a fork until well mixed. Add the chopped eggs and gently mix until fully incorporated.

Serve over toast or however else you’d like! This would also be great over a salad or as a dip for crackers and veggies. And I highly recommend topping with red pepper flakes and/or truffle honey!
