Pumpkin Lasagna

This is one of our family‘s favorite fall entrées!
We have enjoyed this for many years and every time we do we agree it is the perfect fall meal!

Preheat oven to 375*

Pumpkin Sauce
3 TBSP melted butter
3 TBSP AP flour
2.5 C heavy whipping cream
Pinch of salt
Pinch of nutmeg
1 C pumpkin purée

Meat filling
1 lb ground turkey breast or Italian sausage
1/2 onion – diced
3 cloves minced garlic
6 C roughly chopped spinach

Remove from heat and add:
15 oz ricotta cheese
1.5 C shredded mozzarella cheese
1 egg
1/4 tsp fresh sage – cut very fine
1/4 C Parmesan cheese
Pinch of salt

Assemble in a 9×13 pan
Use lasagna noodles that you don’t need to boil and 1 C shredded mozzarella

1/4 C pumpkin sauce first

1/2 of meat mixture
1/3 of remaining pumpkin sauce
Noodles
1/2 of meat mixture
1/3 pumpkin sauce
Noodles
Last Of pumpkin sauce
Mozzarella cheese

Cover in tin foil
Bake for 20 min
Remove tin foil
Bake for 20 min
Let rest on counter 10-15 min
Enjoy!
