Ingredients:
1 lb (450g) shrimp, peeled & deveined
2 tbsp olive oil
1 small onion, finely chopped (or use 1/2 for even fewer carbs)
3 cloves garlic, minced
1/4 tsp red pepper flakes (optional)
1/4 cup dry white wine (or sub with chicken broth for zero alcohol)
1 cup canned diced tomatoes (choose a brand with no added sugar)
1 tbsp tomato paste (optional, adds depth without many carbs)
1 tsp dried oregano
Salt & pepper to taste
1/2 cup crumbled feta cheese
Fresh parsley
Instructions:
Heat olive oil in a skillet. Sauté onion for 3–4 minutes until soft. Add garlic and red pepper flakes; sauté for another 30 seconds.
Pour in white wine or broth. Simmer for 2 minutes. Add tomatoes, tomato paste, oregano, salt & pepper. Simmer uncovered for 8–10 minutes, until it thickens slightly.
Nestle the shrimp into the sauce. Cook 2–3 minutes per side until pink and opaque.
Sprinkle feta on top. Optional: pop under the broiler for 2–3 minutes to get that bubbly top.
Garnish with fresh herbs and a squeeze of lemon.
