    皆が皆ヴィーガンやベジタリアンに興味が有るとは限らない。一品二品だけでも肉のパティでやれなかったのか?それだけで興味の無い人が興味を持ってる人と一緒に来ることが出来たんではないか?
    後、窓際に外を見る席(カウンター席)を作って座らせたら、お客さんが食べてる姿を歩いてる人や車からチラ見してくれる。それだけでも少しは宣伝効果になるのになぁと思った😅

  6. Based on what Ive seen and read, the non shojin ryori plant based and/or vegan food scene is still small in Japan, but it seems to be slowly growing, which I think is great. You have places like Saido and Ain Soph in Tokyo that are thriving and a lot of ramen places seem to have at least one or two vegan options that look fantastic. I'm mostly plant based personally and believe in the various benefits of consuming less meat, so I really hope this guy can find success. Hed probably be quite popular if he opened a small spot in, like, NY or Seattle or Portland or LA, heck, most big cities on the west coast.

    – Most vegan or vegetarian shops still use ready-made ingredients like sauces or patties, because it's much cheaper and faster. These often have preservatives, high salt/MSG content and monounsaturated oils like palm oil. Yet health-conscious people will still eat this because they assume no meat means it's healthier, but they don't care too much about the actual methods and ingredients used.

    – Despite this, the owner makes everything from scratch, and uses quality ingredients like the organic syrup, while sourcing seasonal vegetables.

    2. The owner is realistic and honest about his food.

    – The owner acknowledges two truths, that homemade does not mean better, and that he does not need to make his food taste 100% like meat.

    – He makes his food from scratch so that he can control the quality, and pairs good ingredients with good techniques along each step. Using red wine vinegar in his ketchup adds sweetness, while spices like cinnamon add nuttiness and make it unique. Also, using amaranth to mimic the texture of ebiko is genius! He doesn't try to make it taste exactly like mentaiko, but cleverly flavours it with doubanjiang and soya sauce instead.

    3. The owner values quality over short-term profits.

    – The ingredient costs are still 300,000 yen despite monthly revenue of only 700,000 yen. This is 40%, higher than the 30% he planned. It is likely due to the seasonal vegetables and high quality/organic ingredients he chooses to source. This costs more but it shows his dedication to uphold what the store stands for – quality.

    4. It is easy to make something well-known taste good. It is hard to make something unknown taste good.

    – There are many recipes for meat patties online, it is not hard to make a good beef burger by copying those. However, there aren't as many vegan burger recipes that taste good online. He has created something that is truly his own, while tasting good and being nutritious for the customer.

    5. My humble suggestion

    – The lack of customers may reflect a reality that customers lack awareness about nutrition. The shop's unique point is really its dedication to ingredients and methods that are truly healthy and tasty for customers. However, most people will not appreciate the owner's efforts because they don't understand why they matter. For example, I appreciate many of his methods of using acidity and bitterness to enhance flavours and reduce the need for salt/MSG. But this is only because I have done some research on nutrition and am slightly more educated on this than most.

    – Use social media like Instagram or Tiktok to educate consumers on the nutritional value of his food. This may attract not just people who are already health-conscious, but also those who learnt something from his videos and appreciate his food more.

    I will definitely visit this place when I go to Japan. I hope more people won't see this as just another 'healthy' shop but one that is doing something amazing and good for the customer. 頑張って!

  12. Thank you for this informative video! I've often wondered about the operating costs of small restaurants in Japan. There are so many tiny restaurants with 6-12 seats… it's difficult to imagine how they turn a profit – or if they're operating as hobbies.

    Not only food is excellent, his ambition for making vegan food more fun is fabulous! If you ever come to Fukuoka, you must go there for the whole experience <3
