Spicy herb seafood soup TOM YUM TALAY

Ingredient
*300 g of meat (I’m using 150 g shrimps and 150 g fish filet)
* 750 ml Water
* 125 ml chicken stock/broth
* 40 g galangal (cut into 4 slices)
* 2 stalks lemongrass (40 g)
* 40 g shallots (cut half)
* 5 Kaffir lime leaves
* A pinch of salt
* 6 tbsp fish sauce
* 6 tbsp lime juice
* 1 tsp sugar
* 10 g Coriander leaves
* 10 g long coriander leaves (optional)
* 200 g mushroom (preferably straw or oyster mushroom but paris mushroom is fine)
*2 1/2 tbsp chili oil
*30 g minced chili
*75 ml evaporated milk (or coconut cream)
