Dauphinoise Potatoes (Potato au Gratin)

This is such an easy (French) side dish to make. Your whole family will be hooked on this cheesy potato dish. Serve it with roast or braai. Delicious with meat or chicken.

Ingredients:
4 large potatoes
1 Tbsp olive oil
Salt and pepper to taste
1 tsp garlic paste
1/2 tsp mixed herbs
2 Tbsp butter
2 Tbsp flour
2 cups milk
Salt and pepper
100g grated cheese, (any mature cheese will do)

Method:
Preheat your oven to 190°C. Grease a medium size Pyrex or similar dish with the olive oil. Peel and cut the potatoes into thin slices. Arrange the slices of potatoes in the dish. Season with salt, pepper and the mixed herbs. Rub the garlic over the potato slices. Cover with foil and bake for about 10 minutes until semi soft.

In the meantime make the cheese sauce. Melt the butter in a saucepan. Stir in the flour and cook for 1-2 minutes.

Whisk in the milk to get a smooth sauce. Whisking all the time, bring to the boil.

Simmer gently for 5-8 minutes, season with salt and pepper. Stir in the grated cheese and allow to melt.

Pour the cheese over the potatoes, return to the, bake a further 10 minutes until golden on top. Serve immediately.
