Servings: 4 servings
8 ea whole eggs (Fried) – 2 eggs per serving

2 Jalapeños ( 4 oz )
2 chiles de arbol (optional)
1/4 white onion, medium

1/8 bunch cilantro
Water to cook ingredients
Sauté the sauce in;

6 ea epazote leafs
Pan fry the tortillas

Oil for pan-frying (avocado oil)
1/2 tsp kosher salt to season the tortillas
Season with 1/2 tsp kosher salt (at the end)

Yummy, everywhere I've order these they are ALWAYS different, it's a regional thing I'm sure. I learned to make these from a family friend and hers are COMPLETELY different than these, Personally I'd love to have some refried beans under this version…egg yolk and refried beans are pure magic.

Not sure I'd like the crunchy/soggy texture of these. I won't knock them till I've tried it though. They do look scrummy.
I tried your refried bean recipe today, but used black beans instead, and used the lard 👌just finished them while watching, had them in soft tacos with salad and guac… Yum!
Also made an apple crumble with saffron custard, as I'd run out of vanilla. A decent dinner all in all 😁

I fell in love with chilaquiles while vacationing in Mexico, but they didn’t have the egg on top (they were in a buffet) so you could go get a fresh egg from the grill. I finally found them at a local taco truck but they had carne asada in them. They were AMAZING. Do you have a recipe for carne asada that pairs well with a verde sauce??
