In Russia, it is common to mix rice into meatballs because the rice absorbs the flavor and aroma of the sauce and meat.

Thanks to the rice that is puffed up with that delicious extract, it also makes it more satisfying to eat.

Long grain rice has the property of stretching to nearly twice its length when it absorbs moisture, and the appearance of the stretched rice jumping out of the meatball is the reason why it is called “Hedgehog”.

It is traditionally served with a simple tomato sauce or a rich tomato cream sauce made by mixing sour cream with tomato paste.
This time, we will introduce a recipe for yojiki with tomato sauce that can be eaten refreshingly in spring and summer.

Mixed minced meat 300g (beef, pork, or chicken is also OK)
1/4 chopped onion
1 egg
50g long grain rice (basmati or jasmine)
1 tablespoon ketchup
3g salt
Appropriate amount of black pepper
5 dashes of nutmeg

(tomato sauce)

half an onion
1/3 to 1/2 carrot
2 cloves of garlic
Boiled canned tomatoes (400g)
water until the meatballs are covered

*Personally, I highly recommend eating 100g of yogurt with a yogurt sauce mixed with a small piece of grated garlic.
