Birria Tacos!!!

Meat from @certifiedpiedmontese Chuck roast and bone in beef ribs

Ingredients
7-8 cups hot water
4 lbs chuck roast cut into 4 large chunks
2 lbs beef ribs, bone in, don’t worry it’ll fall off in the end
1 large white onion chopped into 4 pieces
1 garlic bulb cut the narrow top off, no need to peel
1 carrot cut chopped in 4 pieces
5 bay leaves
8 guajillo chilies seeded and stemmed
3 tbsp chicken boullion
2 tsp chili powder
1 tsp mexican oregano
1 tsp ground cumin
1 tsp salt taste

Directions

Brown Chuck roast, then add onions, garlic, carrot, bay leaves, chilies, ribs and cover with water.

I used an 8qt pot, once ingredients are in add seasonings, stir, bring to a boil.

Over the next 30 min, scoop out and foam from the top.

After 30 min, chilies should be soft, remove, place in blender add 1/2 cup of broth, blend till smooth. Strain to remove and skin and put back in broth. Stir to combine.

Drop temp to simmer, cover and every 40 min remove lid and stir. Do this for about 3.5 hours.

Remove carrots, garlic, and bay leaves.

Take meat out and chop up, place in bowl with some broth.

On a griddle, I used my @blackstoneproducts bring one side to high heat other side on low.

Dip tortillas in broth, place on hot side, add cheese, add shredded meat, a little more cheese if you’re about that life.

Fold, and cook. Flip once cooked, then move to the lower temp side.

Once done, add some raw red onions, parsley (cilantro of you have lame taste buds).

Take some of the broth and put in a bowl to dip.

  1. Actually having a less fat soaked version of this tonight. I can't hardly wait. First time making them too totally Homemade.. well. Not the shells.. but nw that I thunk about it. I have made dang good shells before.. but. Nahhhh. Going w the store bought. Lol.. im pooped. 😂😂😂
