Don’t mind have cozy breakfast like this to start the day #sandwichrecipe

This recipe is one of the go-to meals whenever I have meal-prepped shredded cabbage in my fridge. I will only make this sandwich when I have a slower morning, since it does take sometime to fully cook the omelette.

Ingredients (1 serving)
100g shredded cabbage
10g spring onions
2 eggs
Salt and pepper
2 tsp butter
2 slices of wholemeal bread
½ tsp sugar

Steps:
1. Put shredded cabbage, spring onions and eggs in a bowl. Season with salt and pepper, mix well.
2. Heat up 1 tsp butter in a non-stick pan over medium heat. Once the butter is melted and starting to bubble, add the cabbage egg mix into the pan.
3. Lower the heat and use a spatula to push the edges of the egg to the middle to form a square shape.
4. When the bottom of the cabbage omelette turns golden brown, about 2-3 minutes, flip it over. Continue to cook the other side for 2-3 minutes. Once it’s cooked, set aside.
5. Add butter to the same pan and toast the bread. Once bread is nicely toasted, put the cabbage omelette on one of the bread slices. Sprinkle sugar on the egg, then put another piece of toasted bread on the omelette. Enjoy!
