TODDLER MEAL IDEA: QUESADILLAS | EMILY NORRIS

A big favourite in our house is Quesadillas! I used to love these as a kid and I am now making them for the boys 🙂

These are wonderful because they combine a few of my kids favourite ingredients (bread and cheese) with a few of my favourites (vegetables, chickens and beans). This recipe is also great for vegetarian children as the beans and tortilla wraps make a complete protein (just leave the meat out).

You’ll need:
– Wholemeal tortilla wraps (I guess it doesn’t have to be wholemeal but I feel better when it is)
– Cheddar cheese
– Refried Beans (these can be found in the Mexican section of any supermarket)
– Vegetables (whatever you have really but I mostly use onions, peppers, sweet corn)
– Chicken (I like to steam my chicken and this recipe is also great to use up leftovers)
– Salsa and plain yogurt/sour cream for dipping

I take two wholemeal tortilla wraps, spread refried beans on to one side of one of them. Then I add small pieces of steamed chicken and any veggies I have – spread out evenly across the beans. I don’t bother cooking the sweet corn or peppers if I put them in but I do sauté onions if I use them. I then add grated cheese on top evenly (I add a lot so that it hides all the veg once cooked!) Then I put the second tortilla on top and heat it on either side in a pan, until each side is light brown and the cheese is melted inside.

I serve in triangles with salsa and plain yogurt for dipping. My kids love them and the whole recipe takes me 10 minutes to make.

  2. Thanks Emily! Do you have any tips on teaching baby how to self-feed? I have got a 14 months old and want to start teaching him how to self-feed, but don't know where to start. If you could make a video on that, it would be great!! thanks! Btw, I watched your How to teach your baby to sleep through the night video, and finally decided to do it. And it totally works on him too! He learnt how to sleep in 4 days! Thanks so much!!

I'm sending you a Mexican quesadilla certificate 🙂 lolThe only thing you have to know if that if it's one tortilla bended then it is a QUESADILLA, but if you put TWO tortillas as you did then it's not a quesadilla anymore but a SINCRONIZADA :)Instead if it is rolled its a BURRITO.Now you know it all sweetheart! Now you are a true "quesadillera" As soon as you get your hands on a nice avocado please don't hesitate to put it in a quesadilla, or over with a pinches of salt! Avocado make it all better! And it's super healthy! And YES I loved your video as all your videos! I can't have my breakfast without watching them! Xoxo
