THE RECIPES

OAT FLOUR PANCAKES

Ingredients:
Makes 9 large pancakes
2 ¼ cups (250g) Old Fashioned Oatmeal
1 cup (240ml) of milk (or almond milk)
1 date, pitted
1 ripe banana
1 ½ tsp (5.5ml) vanilla
2 eggs
2 tsp (10) baking powder
1 tsp (5ml) cinnamon
1/8 tsp (large pinch) salt
Coconut oil for greasing pan

Garnish:
Honey
Bananas
Blueberries

METHOD:
Place everything in a blender, blend on high.

Grease with coconut oil. Cook. Top with honey, Sliced Bananas and Blueberries

BREAKFAST TACOS
Ingredients:
1 tbsp (15ml) butter
2 eggs
2 mini corn street tacos
2 tbsp (30ml) Cheddar or Monterey Jack Cheese
Avocado, cubed
Dash oh hot sauce or Salsa for Kids
Fresh Cilantro, torn

METHOD:
Heat a pan over medium heat. Place tortillas in pan. Add cheese. Allow cheese to melt.

In a smaller pan. Melt butter, whisk eggs. Pour eggs in pan. Allow to set, then softly scramble with spatula.

Place tortillas on a plate. Add eggs, S/P, hot sauce, Avocado and cilantro

GRANOLA PARFAIT
Makes 3 ½ cups granola
Ingredients:
2 egg whites
2 tsp (10ml) honey
2 tbsp (23g) brown sugar
2 tsp (10ml) vanilla extract
2 cups (210g) old fashioned oats
½ cup (75g) raw cashews
½ cup (75g) raw pistachios
2/3 cup (100g) dried cherries
1/3 cup (30g) shredded unsweetened
Vegetable oil for greasing

For parfait:
Vanilla Yogurt
Fresh raspberries

METHOD:
Preheat Oven to 375F (190C).

Whisk together the eggs whites, honey, brown sugar and vanilla extract.

Then fold in the oats, and nuts. Transfer to rimmed baking sheet, spreading out granola mixture to a single layer.

Bake at 375F for 7 minutes. Add the cherries. Then stir to toss. Bake for another 6 minutes. Then add the coconut flakes and bake for 1 minute more.

Allow the granola to cool completely. Then transfer to a air tight container and store at room temperature.

For Parfait. Fill a bowl or footed glass with vanilla yogurt. Top with granola and fresh raspberries.

ALMOND BUTTER TOAST AND BERRY SMOOTHIE
Serves 1
INGREDIENTS:
1 slice whole wheat bread
Sliced banana
1 tsp (5 ml) raisins
1 tsp (5 ml) shredded unsweetened coconut

SMOOTHIE:
1 cup (150g) frozen mixed berries
1 ripe banana
1 cup (240ml) coconut water
1 tbsp (15ml) Chia Seeds
1 small mandarin orange

THE PERFECT BOWL OF OATMEAL
Serves 1

Ingredients:
1 cup (240ml) water
1 cup (100g) old fashioned oats
Butter
Diced apples
Raisins
walnuts
cinnamon

METHOD:
Boil water in a sauce pot. Once boiling turn off heat, add oats and stir. Place the lid on the pot. Allow to “cook in the steam” for 5 minutes. Transfer oatmeal to a bowl. Add butter, raisins, apples, and cinnamon.

Beautiful video as usual, and great recipes 🙂 However I noticed that your pace has been sped up a bit and I wonder if it's because ever since quarantine you had to shoot your own videos.   7. I will have to try to cook my husbands oatmeal like that! Great tip! I personally love my oatmeal cooked so far down that it eats a little more like cream of wheat (which I used to love as a kid 🤣). I guess I am in the minority on this because my husband hates it that way too. Haha! Thanks for the video Beth!

  9. Can’t wait to make your healthy pancakes! We always clean our blender and milk frother the lazy way haha! Just don’t make it too full or add too much soap or it will go everywhere. Actually I do this with skillets and pans too. Just lightly warm a little soapy water while you’re plating the food or loading the dishwasher and then you can rinse off any food residue from your cookware pretty easily! And yes, we make extra pancakes and the kids put them in the toaster straight from the freezer to warm them. Thank you for another video Beth!

  11. I don’t like banana in my baked goods. Can I substitute a diff sugar like date sugar or applesauce? I imagine they won’t be as moist if I just use regular sugar but maybe applesauce will work?? Or date or coconut sugar combined with milk? Hmm.

  12. Thanks for the extra tips! I wouldn't have thought about adding water and dawn and blending them to soften up the leftovers. Will definitely give this a try after smoothie making!

  14. I love all these ideas! I will incorporate them into meals, possibly over the whole week. Great ways to save on budget, too.
    If I might suggest soaking the oats overnight in the fridge, using water or orange/apple juice, which eliminates having to cook anything! This is actually the uber-nutritious Bircher muesli. Thanks Beth, the home-style recording continues & has become quite professional!

  19. Just made these pancakes with only a few adjustments: I halved the recipe, replaced the egg with ripe banana, and omitted the date only because my bananas were very overripe. These turned out PERFECT, the best pancakes I ever whipped up! Plus they are very, very filling! I'm so happy to have a basic healthy pancake recipe that does not call for oil and can easily be made vegan (I prefer to leave eggs out of my pancakes). Perfect for a quarantine Christmas breakfast!
