*Ingredients:*
– 1.5 cups old-fashioned rolled oats
– 2 ripe bananas — mashed
– 1 egg
– 1/3 cup raisins
– 1/3 cup walnuts — chopped
– 2 tbsp honey or maple syrup
– 2 tbsp olive or coconut oil
– 1/2 tsp cinnamon, pinch salt, vanilla
– Optional: 1 tbsp flax or chia seeds
*How to:*
1. Preheat oven to 350°F / 180°C, line baking sheet with parchment.
2. In bowl mix: bananas + egg + honey + oil + cinnamon + salt + vanilla.
3. Add oats + raisins + walnuts + seeds. Stir, rest 10 min so oats soak up.
4. Scoop 12 cookies with spoon, flatten a bit — they don’t spread much.
5. Bake 15-18 min until golden.
*Done!*
Soft inside, crunchy walnuts, naturally sweet from banana and raisins.
*Tips:*
– No banana: use 1/2 cup applesauce + 1 tbsp extra honey
