Lemon Garlic Shrimp Alfredo 🍋🍤
I tried this shrimp Alfredo at one of my favourite restaurants and became obsessed with it, so I went home and recreated it. After a lot of tweaking, it tastes exactly how I remember it.
Creamy, lemony, garlicky, and finished with a lemon tomato sofrito and crispy fried capers.
Lemon Tomato Sofrito + Fried Capers✱ 2–3 tbsp olive oil (or enough for frying the capers)✱ 2 tbsp capers✱ 1 small red onion or 2 shallots, finely diced✱ 4 cloves garlic, finely diced✱ 1 medium tomato, finely diced (excess liquid removed)✱ Zest of 1 lemon✱ Juice of 3/4 lemon
Shrimp✱ 1 lb shrimp, peeled and deveined✱ 3–4 tbsp butter✱ Salt, to taste✱ Black pepper, to taste✱ Garlic powder, to taste
Alfredo Sauce & Pasta✱ 250 g spaghetti✱ 1.5–2 cups heavy cream✱ 3 tbsp cream cheese✱ 1 cup freshly grated parmesan cheese (or more if you’d like it cheesier)✱ Salt, to taste✱ White pepper, to taste✱ 2–3 handfuls baby spinach✱ Fresh lemon juice, to taste
For Serving✱ Crispy fried capers✱ Cooked shrimp✱ Extra parmesan (optional)✱ Lemon wedges (optional)
