There are gatekeepers in all walks of life. Same goes for tacos, so here is a taco thing. It’s like a taco thing, but not a taco. It’s what google docs is to microsoft word. It’s bootleg and it’s so delicious! That should be what counts. Should be. Should be. But it isn’t. This one is delicious:
RECIPE
For the beef:
Favorite cut of beef (flat iron here)
Powdered Cumin
Salt
Pepper
Olive oil
Sprinkle the steak liberally with salt. Let the salt dissolve and then pat it dry. Sprinkle with cumin and pepper, and fry in oil to your preferred doneness.
FOR THE GUAC
3 Ripe Avocados
1 Sweet Red Pepper, Minced
1 Clove of Garlic, Grated
One Bunch of Coriander / Cilantro, Minced
Juice of 1 Lime
Olive oil
Salt
Pepper
Mash the avos with a fork, then mix in the pepper, garlic, coriander. Squeeze in the lime, mix well, then season with salt and pepper. Finally, stir in some EVOO.
FOR THE BRUISED CABBAGE SALSA
1/2 a Red Cabbage, finely sliced
1 Ripe Pear, very finely sliced
1/2 Red Onion
1 Carrot, Juilienned
1 Mild Chilli, Minced
1 Clove of Garlic, minced
A few stalks of Coriander
A splash of red wine vinegar
Salt and Pepper
Olive Oil
In a large bowl, add the cabbage. Press and punch it until it starts to get bruised and a bit limp, even a little juicy. Add the onion and carrot. Sprinkling liberally with flaky sea salt. The salt will extract some moisture and let things get juicy in the bottom. When the ingredients go limp, strain, and then rinse in cold water. Strain again and let it drip for a bit so it dries out. Add the pear, chili, garlic, coriander and mix through well. Add a light splash of red wine vinegar and olive oil. Mix, and then add pepper to finish.
