This time, I’ll introduce you to a marinade using new onions that you can only enjoy this season. First, the ingredients: 1 new onion, an appropriate amount of tomatoes, and an appropriate amount of parsley. This time, I’m using cocktail tomatoes, which are tomatoes with a good balance of sweetness, umami, and sourness. Remove the tomatoes from the stems, wash them, and cut them into bite-sized pieces. Tomatoes have a strong antioxidant effect , so they’re a great ingredient for anti-aging. I’ve loved tomatoes since I was a child , and when I see colorful tomatoes, I just can’t help but buy them^^ I’ll put the chopped tomatoes in a bowl. I’ll cut the new onions into pieces and add them to the rice. New onions can only be eaten for a limited time from March to May, so I want to enjoy them to the fullest during this season. This time, I received a lot of new onions from Awaji Island from an acquaintance, which I’m really grateful for. After peeling the skin, remove the core and slice them, but at this time, slice in this direction to cut the fibers. Slice them as thinly as possible to make them taste sweeter. New onions are sweet, so it’s okay if they’re not in water, but to make them taste sweeter, I’ll soak them in water for about 5 minutes. [Music] I’m going to chop the parsley. Parsley is highly nutritious and adds color, so I try to use fresh parsley as much as possible, but if you can’t find any, dried parsley is fine too. I often use parsley in other dishes, so I usually buy it when it’s cheap, chop it up, and freeze it. I’ll use this amount for this marinade. I’ll put the rest in a sealable bag and freeze it. It’s very convenient to chop it up and store it so you can use it right away. Drain the water from the onions that you soaked in water. If there’s any water left here , the marinade will be watery, so squeeze out the water as much as you can. I’m going to put the well-squeezed onions in a bowl with the tomatoes, and I’m going to put the parsley in the same bowl. Seasonings: 2 tablespoons olive oil, 3 tablespoons vinegar , 1.5 tablespoons sugar. I’m using Himalayan pink rock salt this time.
