AVOCADO CARBONARA
Serves 2
INGREDIENTS
1 avocado
1 egg yolk
½ cup heavy cream
1 clove garlic
½ lemon, juiced
½ cup parmesan cheese, grated
3 pieces bacon
½ pound spaghetti
1 tablespoon olive oil
PREPARATION
1. Blend avocado, egg yolk, garlic, and lemon juice in a powerful blender or food processor. Pulse to blend and add heavy cream gradually. Blend the sauce until smooth and set aside.
2. Cut up strips of bacon and cook in a large pan. Set aside.
3. In a large pot, bring water to a boil and cook the spaghetti according to the package instructions. Drain and coat with olive oil. Add sauce, bacon, parmesan, and salt and pepper, stirring until well-combined. Enjoy!

In the real Italian carbonara you don't use bacon but check lard and you put the salt in the pasta:d water. But if you like it like this I don't have nothing against you because when you cook you can express yourself In multiple ways

When someone writes a song, gives it a name, and people know it according to its title, another person cannot say they are going to sing that song and then sing something different even if they say it is "their version" of the song for it is a false statement and a lie that insults the original author of the piece. The same is true with recipes. Call them what they are, and if you did not create and therefore name the dish, you have no right to use the name to describe something you are cooking and say it is a known dish when it is not. That is plain false representation.

Ingredients to use for 2 people: – 90/100 gr of Guanciale or Pancetta – 3 Eggs – 80 gr Pecorino Romano (cheese) – 1/2 tsp Black Pepper – 1/2 tsp Salt – 200 gr Spaghetti So simple! Isn't it?

For me, this was disgusting. Avocado and pasta just don’t go together.
This is everything but CARBONARA
1 garlic clove + 1 avocado+ 1/2 lemon juice+ 1 egg yolk-> blend well
Add 1/2c cream and blend
Fry 3 pieces bacon until crispy
Boil 1/2lb pasta until al dente
Add avocado sauce to pasta and mix. Add 1/2c parmesan (or cheese) and mix.
Add bacon and salt
what would happen if i used the eggwhite aswell? I dont want to waste it, plus I need the protein. would that ruin the consitency of the cream?

I printed the recipe and I have a question. Maybe someone else knows the answer. It calls for 1/2 pound of spaghetti. Is this fresh, cooked, or dry spaghetti?
