Birria tacos
beef Berea tacos in large stock pot Place bones and cover with water add onions garlic cilantro salt and bay leaves bring to boil clean chilies salt onions with spices add garlic and ginger cook for one minute add tomatoes and cook for 5 minutes in dry pin roast chilies for one minute mix chilies with tomatoes and cook another 10 minutes transfer to blender add vinegar to cups of broth cumin oregano marjoram and salt blend on high speed add sauce and beef chuck to broth simmer for four hours remove meat from broth strain the broth and boil it uncovered for several minutes cool it down and refrigerate chop the meat separate the fat and fried tortillas on it top with cheese and shredded meat fold and Fry until crisp garnish and serve enjoy
Birria aromatic broth traditionaly made of lamb or beef (birria de Res). Meat slowly cooked in flavorfull sauce made of tomatoes and dried chilies until tender.
