SEVEN VEGETABLE CHILI 【Vegetarian Recipe】 7種類の野菜たっぷりチリコンカン【ベジタリアンレシピ】
Love cooking with these colorful vegetables! This dish works all year around even in summer. This is the best way to eat variety of vegetables and to make things little easier I use Simply Organic Spicy Chili Seasoning Mix. It’s a simple mixture of all the spices you need to make an amazing chili that is earthy, spicy and it’s vegan! I used cheddar cheese for garnish but you can use plant based cheese if you are vegan. The chili is so delicious, nutritious, light and clan in flavor that I can easily finish a bow or tow… or three 😋

Ingredient:
2 onions
3 cloves of garlic
2 carrots
2 celery stalks
1 green pepper
1 bell pepper
1 jalapeño
1 28oz can diced tomatoes
1 15oz can black beans (drained and rinsed)
2 cups water
1 table spoon olive oil
1 ounce chili seasoning mix
1/2 tablespoon black pepper
Shredded cheddar cheese (or vegan cheese) and cilantro for serving
Direction:
1) Chop all the vegetable in bite size, smaller size for jalapeño. Slice garlic thin.
2) In a Dutch oven, saute garlic in olive oil, add the vegetables and stir.
3) Add can diced tomatoes, 2 cups water and black beans and bring to a boil.
4) Mix in chili seasoning and black pepper then simmer for 10 minutes.
5) Serve with shredded cheddar cheese and cilantro.
