— RECIPE —
Serves 1

Ingredients

1 flour tortilla
4 tablespoons aged Cheddar cheese
Large handful of baby spinach
2 fried eggs, cooked for an additional few minutes until yolks are lightly cooked
¼ avocado, mashed or two tablespoons guacamole (optional)
5 cherry tomatoes, diced and tossed with a squeeze of lime and salt
Butter or olive oil
Salt and ground black pepper, to taste

Preparation

Place tortilla in a frying pan over medium heat.* Toast on one
side for three minutes until warm. Flip and add cheese to tortilla.
When cheese is melted, remove tortilla from pan and add a small
amount of olive oil. Add spinach with a pinch of salt and sauté
for 2 minutes until wilted. Spoon onto a tortilla. Prepare eggs and
place on top of spinach. Add avocado or guacamole and top with
tomatoes. Wrap tightly into a burrito.

*If making multiple burritos, warm tortillas topped with cheese
on a parchment-lined sheet pan at 350°F (180°C) for 5 minutes
while preparing other ingredients.
